Apple Pancake

Yesterday I got to work from home and hang out with Leonard all day.  It's such a joy to send emails from your pajamas.  Since I had a bit of extra time without my usual commute, I wanted to make a special breakfast for dinner for Mike.  Apple pies are his favorite so I thought I'd try this recipe for Apple Pancake to switch it up a little bit.

Ingredients:
- 6 eggs
- 1 cup whole milk
- 2/3 cup flour
- 1/2 tsp salt
- 3 T butter
- 3 large apples sliced
- 1/4 cup brown sugar
- 1 tsp cinnamon

Directions:
- Preheat oven to 425 degrees
- Whisk your eggs, then add your milk, flour, and salt; make sure to whisk between each addition
- Once your oven is nice and hot, place your butter in a 9x9 pie pan and put it in the oven to melt

- Once the butter is melted, take the pan out of the oven and add your apples
- After adding the apples, place the pan back in the oven until the butter starts to sizzle
- Once you hear the butter, pull the pan out of the oven and slowly add your batter
- Mix your brown sugar and cinnamon together and sprinkle on top after the batter has been added



- Cook for about 30 minutes until it is puffed up and golden brown.  Serve hot!
